¾ cup coconut or almond milk
3 tbsp melted coconut oil
1 cup almond flour (or ½ cup almond and ½ cup pecan)
2 tsp baking powder
1 (small, green) packet stevia- or sweeten to taste
½ tsp salt
(Optional) Chopped bacon, pecans, almonds, or macadamia nuts
Beat the milk, oil, and eggs together. Add dry ingredients and stir just enough to mix well.
Brush pan or griddle with oil – you probably know how to cook pancakes! These may take a little longer on each side. If you try to turn them too soon, they will fall apart, but they are still tasty even then.
These can be eaten without any toppings. The macadamia nut ones are especially yummy!
