2 Large egg yolks
2 tbsp fresh lemon juice
1 tsp Dijon Mustard
½ tsp sugar
½ tsp kosher salt
¾ olive oil
Combine all ingredients.
With the motor running, pour ¼ cup extra virgin olive oil
Mixture should be thick and shiny (you may need a little less or more olive oil)
Add 1 tsp finely shredded lemon zest. Add salt and lemon juice to taste. Chill until cold and makes ¼ cup.
