Almond Shortbread Cookies


  • 1 1/2 cup almond flour
  • 1 tbs liquid stevia
  • 1/2 teaspoon baking soda
  • 5 tablespoons softened Myokos butter
  • 1 teaspoon almond extract
  • Pinch salt


  1. Preheat the oven to 350°F and line a baking sheet with parchment.
  2. Whisk together the almond flour, liquid stevia, baking soda, and salt in a mixing bowl.
  3. Beat in the butter and almond extract until it forms a crumbled mixture.
  4. Gather the mixture into a ball by hand then wrap in plastic and chill for 15 minutes.
  5. Pinch off pieces of dough and roll them into 1-inch balls.
  6. Place the cookie balls on the baking sheet and flatten slightly with a fork.
  7. Bake for 8 to 11 minutes until the tops just start to brown then cool for 10 minutes on the baking sheet.
  8. Transfer to a cooling rack to cool completely.
