Almond Meal Pumpkin Pound Cake


  • 1 cup canned pumpkin
  • 1 1/2 tsp liquid stevia or to taste
  • 5 large eggs
  • 2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice


  1. Preheat oven to 300 degrees F. Coat pan with coconut oil and sprinkle vegan protein powder to decrease sticking. Set aside
  2. Beat pumpkin, powder, vanilla, and pumpkin spice with stevia until smooth.
  3. Beat in eggs then almond flour.
  4. Add a little water or coconut milk if needed to make it a thick, but pourable batter.
  5. Pour into prepared pan and bake 1 hour to 1 hour and 15 minutes. It will pull away from sides of the pan.
  6. “Test” done with a toothpick. Let cool before you remove from pan and slice.
